For dinner tonight – Iberian pork loin with clam and polenta. These have got to be the most tender pieces of pork I’ve ever had and I never thought pork could actually taste so good. Well done, chef!

    It is also with clams, the pork is marinated in a red pepper sauce. It is delicious
